I am so happy to be back! I came in last night and was greeted immediately upon entering by wet dog kisses, tail waggings, and cat meow “hellos”. It doesn’t matter if we are gone an hour or 4 days, they always have a happy greeting when we come home. My husband, Mr. Coffee, always says that we can learn a lot from animals. They are so easy to please and get really excited about absolutely nothing. It’s great!
I arrived just in time last night to learn despite the fact that I made my March Madness pics based on mascots or schools I like for one reason or another, I was in 11th place out of 80 something. We’ll see how long that lasts. My husband and his family make out brackets every year with a bunch of friends, and I joined in 7 years ago when we started dating as a way to find some enjoyment out of watching so much basketball. I never do well in the end, so I’m going to bask in the glow of not being at the end of the line for at least a day 🙂 Between just the man and me, we also bet on such important Super Bowl moments as what color the Gatorade would be that was dumped on the winning coach (yellow or not yellow) and what type of commercial would be the first shown. I need incentive to watch sports all day.
This morning I woke up at my normal time and headed for the gym since it is now dark when I wake up. Darn time change! I did a 15 minute warm up on the elliptical and then a little over 40 minute run on the treadmill (5 miles at 8:10 average pace). It felt great!
I made my perfect cup of coffee with almond breeze as soon as I got home and then started on making peanutbutterfinger’s protein pancakes. I changed it up a bit using less chocolate protein powder and adding some flax seed meal.
I topped them with a scoop of almond butter and half a banana. So yum! Definitely a keeper recipe.
It was awesome to be back in my kitchen where I could be a little more creative with breakfast.
1 scoop chocolate protein powder
2T cottage cheese
1T chia seeds
1T flax seed meal
2 egg whites
handful of spinach
I mixed all the ingredients up my Magic Bullet and then cooked them til done. A side note…that little bullet may be my favorite piece of kitchen equipment. It’s so small, easy to use, easy to clean, and multi-purpose.
