It is steamy here today! It is so humid, but I’m not complaining. It was 60 degrees when I woke up which is a nice change from the normal 30s and 40s it has been in the morning. I was much more comfortable on my half mile run to the gym even if it did feel like a sauna.
I did 15 min on the elliptical followed by 4 miles on the treadmill. The first mile at 8:15, the second and third at 8, and the fourth at a 8:45 pace varying the incline between 1 and 8 (went up 1 each 30 seconds). Then I cooled down with 10 minutes on the bike and ran home.
Breakfast is being eaten as we speak and consists of my perfect cup o’ joe and Flax N Snax butter pecan hot cereal with half a scoop vanilla protein powder, 1T flax, and topped with banana and pecans.
I have a solid day of work ahead with a yoga interruption around noon. It’s nice to break up the day with something physical.
Let’s take a step back real fast to review last night. I’m not sure I will often post at night since that is the only time during the day I see my husband, but generally we are just hanging out upstairs and are both on our computers anyway, so don’t be suprised if I show up post dinner.
Last night, though, was our Lost night, so there was no way I could get on the computer. We are obsessed! We don’t really watch much tv, and didn’t actually get into this show while watching it on tv during the season. We were given seasons 1 and 2 by a friend who said we would love it. After watching episode after episode (I’m not even going to admit how many we could watch in a row) and buying the rest of the seasons, we were hooked. This last season is the only one we have actually watched during the season and it’s weird to have to wait a week between episodes. I guess we are learning patience 🙂 That said, we do aboslutely no multi-tasking when it is on on Tuesday nights. Sad maybe, but we have so few vices 🙂

Anyway, before we got zoned into the tv, we had a yummy dinner. I made chicken cordon bleu in puff pastry which is one of Mr. Coffee’s favorites. I made his the traditional way with ham and cheese and mine I tried this time with a new spinach artichoke hummus and laughing cow cheese.
It’s a really simple recipe and yet tastes like it took hours. I love recipes like that. I also love that there are so many variations. I’ve made it with feta, dried cranberries and spinach, or goat cheese and apricot preserves (my mom’s way). All are very good.
Chicken Cordon Bleu – Serves 4
1 puff pastry sheet
2 chicken breasts
4 slices ham
4 slices swiss cheese
2 egg whites
Brown the chicken breast in a pan until just golden on each side and place in the fridge to cool. Roll out the puff pastry on a floured surface to flatten a bit and cut into four squares. Top each puff pastry with dijon mustard, a slice of ham, and a slice of cheese. Cut the chicken breasts in half and top each cheese slice with chicken. Fold up the edges of the puff pastry covering the ingredients. Brush with egg white and place seam side down on a baking sheet. Bake at 350 for 30-40 minutes until golden.
Instead of the dijon, ham, and cheese, I spread 1 wedge of laughing cow light swiss and about a tablespoon of spinach artichoke hummus on the puff pastry then topped it with the chciken breast.
As I was knocking out the cardio, I was watching Good Morning America. They were discussing a new study that shows women of a certain age need an hour of exercise everyday to maintain their weight. That’s all 7 days a week. The previous recommendation was 30 minutes 5 days a week. Now, this is moderate exercise, but I’m curious what others think. I do an hour a day, more if you include yoga, but I’m fairly young with no kids. I also know that mine would be considered more than moderate, which would allow less time. I just wonder if that’s a lot to ask as one get older. I do realize that a walk or hiking or other activities that go on during a day that are not “gym” time would count, so I’m starting to think it’s not asking a lot. What exactly is considered moderate? I think it’s doable.
