I got some inspiration from Em, and decided to create a little french toast for this mornings petit dejeuner. My version was made with Ezekiel bread dipped in an egg white with some cinnamon and topped with cottage cheese that I mixed with, flax seed meal, agave and more cinnamon.
French Toast My Way
1 slice Ezekiel bread
1 egg white
1T flax seed meal
1/4c cottage cheese
Mix the egg white with cinnamon and let the bread soak it up, flipping to get both sides. Preheat a pan over medium heat and coat with cooking spray. Cook the bread on both sides until browned. Mix the cottage cheese, flax seed, agave, and more cinnamon. Top the bread with the cottage cheese mixture.
I had the necessary morning cafe au lait, as well. Nope, I didn’t change up my perfect cup o’ joe. Same ole’ coffee with milk sounds much more elegant in French, huh? 🙂 Green Monster #5 also joined me on my mental vacay to Paris. Gotta get in the green.
This weekend I did several runs outside without a watch or ipod (“naked” as I’ve seen it called), just my legs, the running shoes, and the great outdoors. I also ate meals full of fresh fruits and veggies, and though it’s the dreaded Monday morning and I just did a full hour of cardio, I am still refreshed and ready for the week. I’m convinced that nature is our best nurturer.
It’s up to us to protect and try to better the world that provides so much for us everyday. Earth Day is coming up on April 22nd. It is on April 22nd every year, but since that’s a Thursday this year, a lot of events will be held on the weekends around it.
One important event is the Run for Water which will be held across the country on April 18th. I read about it in April’s Health. Unfortunately we don’t have one in Austin, but if you click the link above, you can see if there is one near you. The Dow Live Earth Run for Water is a series of 6K charity runs all held on the same day and it raises money for impoverished women who walk miles to get clean water.
I drink 2 or 3 liters of water a day and typically H2O is all I drink other than coffee and the occasional coconut water on any given day. Turning on the tap and having clean water flow out is definitely something that I take advantage of. Clean, safe drinking water is a luxury in some parts of the world. The UN has reported that contaminated water kills more people across the world in a year than all forms of violence including WAR. Sad. Facts like that really make me appreciate what I have. It’s important to be aware.
