I have three more entries for the Earth Day Challenge. Score!
I typically don’t eat meat at breakfast, but my lunch and dinner are mostly meat-filled. I decided not to enter one of my many breakfasts as my vegetarian meal since that is routine for me, but instead to make a point to have a meatless lunch. And here it is on day 2 of the challenge. I made a egg white scramble with black beans, yellow bell pepper, onion, tomato, and topped with avacado. I also had a side of mango and raw veggies. I feel very satisfied and still managed my protein fix sans animal death. Wow, that was morbid! 🙂
The day wasn’t actually sans animal death unfotunately. Earlier I was driving down my street as a squirrel ran into the road. I slammed on my breaks as did he and we both stopped just in time. He sat there staring at me and me at him and then he turned to scamper back to the curb.
I began to go again right as he changed his mind and darted back out. I foolishly looked in the review mirror hoping he had made it, but there he was. Lifeless. I feel horrible! Luckily I was on my way to yoga because I was in serious need of some zen after the vehicular squirrel-slaughter. Why do they change their minds? Is it like squirrel-roulette?
After that, it was a good day to eat vegetarian.
The next entry for the contest is my Friday grocery run all packed into my green bags. I have these bags in my car all the time, but I usually make it into the gorcery store, up and down the aisles, and through the check-out to the point where they ask paper or plastic before realizing the bags are still in the car. No good! And not today.
My final entry for today is washing a load of clothes in cold water.
I had plan to dry said clothes outside in the sun, but the sun has yet to make an appearance today, so that point will have to be earned at a later date.
