Yay for Friday! I got in a good hour cardio session and finally have a relaxing, non-rushed morning to enjoy my coffee and some chocolate protein pancakes. Oh, how I love my mornings!
Last night I got home from yoga around 6 with the intention of making a salmon topped with black bean salad. The hubby had his day off and had gotten hungry early, so he had already eaten.
No biggie. It gave me a chance to eat tofu. That is a food item that will never cross his lips (knowingly anyway 🙂 ) and I happen to love it. It made it on my plate an unprecedented twice this week since on Wednesday he had a guys night out complete with a sporting event and dinner.
I took the advice of Julie and baked it in the oven. I brushed it with bbq sauce and popped in at 425 degrees for 20 minutes, flipping it half-way through. Last night I threw some brussel sprouts in the oven too and cooked them for the same time.
I love roasted brussel sprouts! It may be my favorite green side dish. The really crispy (ok, burned) leaves taste almost like popcorn. Yes, they do. No, really. I’m serious! 🙂
On Wednesday night, I had a huge salad. It was really the main course with tofu on the side 🙂 I used mixed greens, strawberries, feta, and some sliced almonds. I topped it off with a new dressing that I loved.
