“And you’re gonna be in trouble.  Hey la Hey la, my boyfriends back.” 

Ok, so he isn’t my boyfriend anymore.  Better, he’s the husband.  And I see no reason why you would be in trouble.  However, he IS BACK!  HEY LA!

Jensen got home from Oklahoma City around 10pm lastnight (not in time to prevent me from renting yet another girly movie…more in a minute) and I’m so happy he’s home.  I got up early because I can’t sleep past 7 anymore (Boo!) and went for a 6 mile run followed by an hour of hot yoga while he was catching up on his Zs.  After that I was all his for the rest of the day. 

We took the pups to Red Bud Isle Park where they joined a hoard of other dogs and their parents along the trails and chasing balls into the river.  We hiked around for an hour and a half stopping every so often to smell butts (them not us of course) and cool off in the water (them and us).   I think everyone in Austin has a dog and there are only a few off-leash areas, so it was crowded.  No biggie.  Dogs of all sizes to befriend and be entertained by.  So fun!

I had to steal those pics from the internet since I forgot my camera (lowering my head in shame), but that’s exactly what it looked like.  Or would without a few slew of animals of both the fur and human variety).  Beautiful!

We were famished after all the excitement, so we headed to our favorite burger joint that is fur friendly, The Crown and Anchor.  We leashed up the boys because its required but hardly necessary since they were POOPED!  Any other time our spaz blue heeler (Tucker) might not have been so easy to handle while trying to eat, but the pre-lunch playdate brought him down to normal dog level.  I had the veggie burger (the best in Austin in my opinion)  which is perfectly crispy on the outside and well-seasoned and guzzled water while the dogs napped a bit.  We hung out for a while enjoying the outdoors further and our table in the shade before heading home where the napping continued.

I’m not a napper.  I cannot sleep in the middle of the day and always feel so much worse when I wake up.  If I’m really sleepy, I’m more commonly just going to go to bed really early that night.  Anyway, blogging is the perfect thing to entertain me while I wait on the others to get their second wind.  Not sure what I’m waiting on though.  We have no real plans for the rest of the day other than hanging out and resting up for the start to the workweek (sorry to spew such vile language for all eyes to see). 

Before I go, I’ll take a step back to the before-mentioned final girl movie rental.  When the hubby called to say he wasn’t going to be home before 10pm, I rented It’ Complicated.  On Demand movies with a simple click of the remote has been both my utter joy and my productivity downfall this weekend.  Not apologies, though, its a holiday afterall.

I love Meryl Streep and this movie was really cute.  I agree with Amy that Alec Baldwin’s need to be naked was a bit disturbing, but all in all the movie was another winner if you’re in need of a frivolous flick.

Ok, off to do I don’t know what, but enjoying my last day of this long weekend is definitely going to be a part of it.  See ya tomorrow!

Movie Madness

You’ll be happy to know there has been no more crying since Thursday’s movie viewing.  I have seen three other movies since then and managed to keep my composure.  Friday night was Valentines Day, and I really liked it.  I was told it was a lot like Love Actually and it actually was.  Haha! 🙂  With such and all-star cast it was bound to be decent and I was definitely entertained. 

Yesterday was a bit of a whirlwind for a Saturday, but two movies made the list.  First thing was a good run, then the farmer’s market , an hour of hot yoga , and a speedy shower and lunch of leftover Confetti Salad with a container of Fage eaten on the way to the theater.  I met Kelly for Sex and the City 2 and loved it!  If you have never seen an episode of the tv show, I’m not sure a random viewing of this movie would be satisfying.  It was a bit over the top.  However, being a rabid fan (my favorite tv show EVER to date) I was happy to see my favorite on-screen girls again.  If you know the characters, it all works. 

I came home post Sex (um…sounds a bit scandalous) and a few final errands to create a wonderful dinner from my farmer’s market finds.  Roasted veggies were the star with some rotisserie turkey breast as my protein.  I chopped a few of the little carrots, one of the white eggplants, half a sweet potato, an some onion, tossed them with olive oil, a clove of minced garlic, and some salt and pepper before popping them in the oven at 375 for about half an hour.  I also had raw broccoli and baked pita chips (made from and Alternative pita and crisped in the oven with the veggies) with roasted red pepper hummus.  After all my morning exercising, a quick lunch, and minus my afternoon snack, I was starving!  Dinner was a hodge podge and I loved every bite.

After dinner was in-home movie #3 for the weekend not counting, of course, the afternoon film at the cinema.  500 Days of Summer was the final chick flick before the hubby returns.  I LOVED it!  I think it’s my fave of the weekend.  I really liked the guy in it, though I have to admit I was skeptical going in.  I mean, he was in 3rd Rock from the Sun after all and that may be one of the worst tv shows in history.  Clearly I was not a fan of his previous work, but he was great in this movie.  Redemption!  I’m sure he’ll be happy to hear of my approval 🙂  I also liked that I have one of the shirts Zoe Deschanel wore in the movie and its from OLD NAVY!  Love low budget!  

Today started with a little hot yoga and now I’m off to paint the trim in our kitchen.  Our doors and cabinets are all a pretty creamy off-white since we painted them first thing when we moved in along with most of our walls.  The trim somehow was missed, though, and it looks way more yellowy up against the doors and cabinets.  It is one of those small things nobody else would probably notice but it drives me CRAZY!  Since I have an extra day this weekend, I figured now was as good a time as any to get it done before it drives me too batty.  Apparently sitting around is not something I do well and I’ve had enough relaxation for a while. 

The best part of today?  No work tomorrow.  Three day weekends are the BOMB!

After this morning’s 7 mile run, I quickly brewed some coffee and whipped together a breakfast to-go.  I had a chocolate banana protein shake and after a sweaty workout, it really hit the spot.

In the mix:

1/4 banana

1 scoop chocolate whey protein

1T flax seed meal

1T Ghiradelli dark cocoa powder

handful of spinach

1/2c unsweetened chocolate almond breeze and 1/2c water

1/2t xanthum gum

I mixed it all in my Magic Bullet and added a  few ice cubes for the chill.

I had to get on the road to hit up the Farmer’s Market before yoga and before it got too hot.  It was already a bit warm at 9am, but not unbearable.  Yet.  I got another good array of veggies some of which are new to me.  Watch out!  I’m getting adveturous.

Anyone ever had kohlrabi?  This one is new to me, but they looked too cool to pass by.  The guy said they were similar to jicama and would be great with dip or on a salad.  I thought I’d give em a try.

The plethra of banana peppers were a bit of an impulse buy and I’m not really sure what I will do with them all.  Again it was suggested they would be good on salads and sanwiches, so I decided why not.  Any ideas on what to do ALL with these?

Most mornings I wake up Bright Eyed and Bushy Tailed.

I know it’s cheesy but I’ve always loved that saying (did you know it’s referring to a squirrel?  I always thought of a bunny.  I looked up the origin because I’m a nerd like that. 🙂 ) and I am clearly a morning person, so it fits.  Not this morning.  I woke up still bushy-tailed (my interpretation=happy and ready for the day), but the eyes were puffy.  I also had a slight headache.  I did drink my normal nightly glass of vino rouge lastnight, but that’s nothing new.  The real culprit for my less than on par morning….Dear John. 

Damn you Nikolas Sparks, you got me again!  First with The Notebook (one of my favorite movies ever) and now this.  It may sound like I’m giving a somewhat negative review what with all the crying.  I’m talking the ugly cry.  Gasping for breath at times.  Stuffy nose to top it all off.  However, I loved the movie!  It is a tear jerker, but a really great story if you are the sappy love movie type.  It is weird that I tend to be a bit stoic and mostly the less sensitive part of my couple, but I LOVE a sob-inducing love story.  Maybe it’s my release.  I do like them to end well and have seen a few that rip me apart all the way through just to end crappy too.  Not a fan of those.  Anyway, I recommend this one for sure.

I got a few stares from the dogs wondering what was up with their crazy lady and the cat climbed up in my lap.  Animals are funny and I swear they can sense sadness or sickness.  Not that I was all that discreet and sensing was needed.  The sobs pretty much gave it away.

Um..should we do something?

Anyway, I have had a good run and some good coffee and feel much better.  I am now sitting in my home office with the window open enjoying the morning air and getting some long-overdo computer work done. 

Valentines day and 500 Days of Summer are on the list for tonight.  I may only get one in since I’m and old lady and get sleepy early, but I’ll get them both in sometime this weekend.  Tomorrow I’m going to see Sex and the City with Kelly, so the movie marathon continues.  Don’t worry about all my planned sitting around though.  Daily yoga and cardio are also on the docket too to keep muscle atrophy at bay.

In my mouth!  Lunch today was super yummy!  I made my favorite all-time side.  Confetti Salad slightly modified from this recipe out of Cooking Light.  It’s quite old (July 2008), but I have made it many times and it’s always a winner.  It’s my go-to when I need a pot luck dish.

I had to make a few revisions based on what I had in the house and it was the perfect use of some of my Farmer’s Market finds from last Saturday.  I used chickpeas instead of black beans, quinoa in place of brown rice, and cucumber instead of zucchini.  I also used half a diced fresh jalapeno instead of the pickled jalapenos and EVOO rather than canola (those two switches I make everytime I’ve made this).  I left out the green onions because I didn’t have any, but didn’t miss them.  So we’ll just say the recipe was inspiration though in the end it didn’t taste that different. 

Confetti Salad

     1c cooked quinoa (or other grain)

     1c corn kernels

     1c course chopped cucumber (I used 2 of the pickling size)

     1c. grated carrot

     1/2c diced tomato

     1/3c diced red bell pepper

     1/4c diced red onion

     1 can grbanzo beans (or any bean)

     1T lime juice

     1T olive oil

     1/2 minced fresh jalapeno (ribs and seeds removed)

     1/2t kosher salt

     1/2t chili powder

     1/4t freshly ground black pepper

Combine all the ingredients in a large bowl, stirring well to combine.  Cover and chill at least 1 hour before serving.

It was double duty while making my breakfast this morning.  I was a food preppin machine!  I prepared the quinoa and chopped up all the veggies as the pancakes were cookin.  All that was left was mixing it all together and sticking it in the fridge to marinate unitl lunch.  I had the pretty salad along with some turkey and swiss rollups.  Party at noon!  Perfect!

 And what is a party without dessert?  Mine came in the form of greek yogurt with blackberries.  Honestly, greek yogurt with fruit mixed in is just as satisfying to me as a sugary treat.  Not that I’m giving up my mom’s pumpkin pie (my idea of ultimate indulgence), but this is a great sub on a daily basis.

Tonights the Night

Sex and the City is opening TONIGHT!  Sadly, I’m not going, but I’m excited just knowing that it is available for viewing and I will be going very soon.  Is anyone going tonight?  

I am having a girlie weekend even if Those Girls aren’t a part of it.  Jensen is headed off to Oklahoma City for the Big 12 Baseball Tournament with his dad.  I was invited, but three days worth of all-day baseball was not my idea of a good time  and it’s a 6 hour drive.  I’m no good in the car, so for me to drive that far there has to be something exctiting waiting at the end.  Baseball is not that something.  Don’t get me wrong, I like baseball.  One game at a time.  Not multiple in a row for multiple days.  

Anyway, I will have a Me Time weekend.  It is sure to include lots of yoga, running, cooking, and chick flicks!  On the list so far is

I started off my day with a good 6 mile run followed by coffee and protein pancakes topped with strawberries and bananas.  

I'd already started on them 🙂

Work awaits with a yoga session at the end.  I think I will get started with one of the movies tonight since all the good shows are now in hiatus for the summer.  I’ll let ya know what I watch and how it was.  Be sure to tune back in later  🙂

Vent hood soon to be a GONER!

I’m seconds away from just plugging  it directly into the wall and using it as is.  Pretty confident fire would be the outcome of that frustrated action, but I’m about to get desperate.  I’ve lived without one for a year and a half and for some reason now I can’t stand a few more days without.  Does it look like its smiling at me?  Mocking me as I heat my milk in a pan over the stove for somewhere around the 529th day.  But who’s counting? 

The reason it is still sitting on the floor where is has found a home since we picked it up on Saturday is because the guy who is supposed to install it and do a few minor cabinet adjustments to get it all situated was a no-show yesterday (I’m a fan of the run-on sentence).  He didn’t totally flake if you count the fact that he called me at noon to say he was running late (since he was supposed to arrive at 8:30) and I got a text from him around 9pm letting me know he was sorry he hadn’t made it by and we could set something up NEXT WEEK! (again with the run-on) 

It’s your world buddy and I’m just livin in it.  Or actually I baked in it.  I had a lot of work to do and was out and about all morning while I waited on him to call to tell me he was headed my way (which clearly never happened), but spent the afternoon working on the computer and drumming my fingers next to the phone.  Until I remembered a yummy recipe from Julie’s blog this weekend and it occurred to me that one surefire way to make an irritating day better (besides yoga which was out since I had to stay by the phone) was cupcake/muffins.  Both the baking and the eating is cathartic.

I made a few revisions based on what I had in-house and they turned out awesome.  I replaced the oil with applesauce, the wheat flour with oat, and the skim milk with unsweetened almond milk.  I immediately ate two and stored the rest for consumption at a later date.

Blueberry Craisin Muffins (revised from Cranberry Orange Muffins)

     1 box 18 oz. reduced sugar yellow cake mix

     2 tbsp. oat  flour

     Egg white equivalent of 3 eggs (I used Better’n Eggs All Whites)

     2/3 c. unsweetened vanilla almond milk

     1/3 c. unsweetened berry applesauce

     1 1/2 c. dried cranberries (I used blueberry Craisins)

     1/4c diet sprite (needed moisture and its all I had that was citrusy.  The original recipe used fresh squeezed orange juice)

Preheat oven to 375 degrees.  Mix everything together, stirring in the dried cranberries last.  Spoon batter into muffin tin lined with muffin cups.  Bake for approximately 18 minutes
