So Lazy Sunday started that way but boy did it take a turn! We had a busy Friday night with the concert and a need to go almost directly from work to the venue along with a packed Saturday that ended with a wine and cheese party at my husband’s work. Sunday plans were to have no plans. The one definite plan was to relax. So what did we do all day?
That floor is our front entry and we have had strong negative feelings towards it since we moved in a year and a half ago. We have had plans to take up the tile (which was started already in this pic) and lay down slate. No date in mind, just future plans. Well, apparently the date came.
We decided to go to a burger place here called Crown and Anchor for lunch because it was a beautiful day and they have a great porch. I had the veggie burger and Jensen ate the real deal and apparently we had energy to spare after our hearty meal. There also was some DIY network watching during our successful lazy morning leading to a non-existent lazy afternoon. We stopped at the tile place on the way home to look at buy tile for the entryway.
We tore up the tile (yes, I helped 🙂 ) and then scraped up the stuff underneath to smooth out the floor (I helped less). Looks like I’ve become a do-it-yourselfer by marriage 🙂 Next, we sprayed the slate with water to see their true color and layed them out .
They will be darker than this pic shows once they are sealed and we plan to lay them in a staggered pattern, but you get the idea. We haven’t actually glued them down yet, but the hard part is over. It was not a relaxing Sunday as planned but I’m so excited about our new entryway. Totally worth it! We also got in some good bonding time which is always a BIG plus.
This morning I woke up bright and early to a crisp morning, which is a welcome respite from the humid mornings of late and the many to come in the Texas summer. I got in my hour cardio and headed home for COFFEE!
I was already excited about my plans for breakfast, too. Jessica over at Healthy Exposures always has the prettiest oats! They often cause a raging mild case of food envy and her carrot cake inspired oats pushed me over the edge. I had to try them! How could my favorite cake miss as oats? Couldn’t possibly. And DIDN’T! So good!
So my pictures are for sure lacking compared to hers, but definite progress from my plain ole oats of the past.
Here’s how you do it. Or how I did it anyway.
1/4 c Bob Red Mills 5-grain hot cereal
2T oat bran
3 oz shredded carrot (I’m lazy and bought pre-shredded)
1/2c brewed coffee
1/4c almond milk
1T chia seeds
1/2 scoop vanilla protein powder
dash cinnamon, nutmeg, ginger, and vanilla
2T plain greek yogurt
1T almond milk
I put the coffee, almond milk, water and carrots in a pan and brought it to a boil. Then I added the hot cereal, oat bran, flax, chia, spices and vanilla. I cooked it for 15 minutes (I just kept checking to see when the carrots had softened) and then stirred in the protein powder and a packet of stevia. I took it off the heat, poured it in a bowl, topped it with 1T raisins, 1T nuts and oat “icing” (2T plain greek yogurt, 1T almond milk, 1/2 honey and cinnamon) .
Loved! I’ve gotten spinach into my pancakes and now carrots in the oatmeal. Veggie genius! Who says healthy eating is boring?!
