One of the dominant flavors of Christmastime for me is gingerbread. I make ginger krinkle cookies every year for the holidays and Jensen and I even spent an afternoon before Christmas this year making gingerbread houses. It was so much fun! Gingersnap/gingerbread or molasses cookies are my all-time favorite cookies not just for winter and they even made an appearance at my April bridesmaid luncheon before my wedding 2 years ago. My aunts know me so well 🙂
After turning my favorite cake (carrot cake) into both oats and protein pancakes earlier this week, it was time to give the favorite cookies their turn at becoming a hearty, healthy breakfast. Yesterday was the first run at gingerbread oats.
The spices involved make me feel all warm and cozy. Not that I need that when it’s 94 degrees outside in MAY, but I like the flavor anyway.
1/4c Bob Red Mills 5-grain hot cereal
2T oat bran
1T flax seed meal
1/8t ground ginger
1/8t ground cloves
drop or 2 of vanilla extract
cinnamon to taste ( I never measure cinnamon for some reason)
1 scoop vanilla protein powder
1/4c almond milk
1/2c brewed coffee
I boiled 1/4c water, 1/4c almond milk, and 1/2c brewed coffee in a pan and then added the hot cereal, oat bran, flax, chia, spices, and molasses. After boiling for 10 minutes, I took it off the heat and added the protein powder. I topped the whole thing off with the raisins.
Today the protein pancake version was the star of the show.
Gingerbread Protein Pancake
1 scoop vanilla whey protein powder
2T cottage cheese
2 egg whites
drop or two of vanilla
handful of spinach
1T flax seed meal
Throw all the ingredients in a Magic Bullet or blender and whirl away. Heat a sprayed pan over medium-high heat and cook mix like a pancake. I topped it all with sugar-free maple syrup.
Oh, and I also cleared up the Starbucks Frappy Hour mystery. It exists and it starts today!
It runs today (the 7th) through May 16th from 3-5pm. Half price frappucinos any way you like em. My version is a Non-fat, Sugar-free Caramel Light Frap. Hits the spot everytime!
