Yesterday was CRAZY busy! I was out of town most of the day for meetings and arrived back in Austin just in time for a much needed 90 minute zen-inducing hot yoga class. That sidled right up to dinnertime, so I needed an easy go-to. Crockpot power was enlisted in the morning before I headed out and happily kept its contents warm until I arrived home. Fix it and forget it!
In the pot was a couple of chicken breasts topped with a bag of fresh salsa.
This is a trick I learned years ago and its so easy and provides moist, flavorful shredded chicken that is multi-use. After cookin on low for 8 hours (or high for 6), simply take the chicken out of the pot and use two forks to shred it.
Lastnight I made a Chipotle burrito bowl inspired meal by heating up some black beans and topping them with the chicken, some shredded cheese, a little avocado, and shredded cabbage. The husband used his shredded chicken taco-style on flour tortillas with bean dip, avocado, some of the salsa from the crockpot, and shredded cheese. Two uses already. I plan to use the leftovers in wraps, egg white scrambles, and added to Amy’s black bean soup for a protein punch.
I woke up early this morning for my hour cardio session and quickly dressed and was out the door. It was yet another day out of town for work and so I had breakfast on the road. It was a repeat of yesterdays chocolate oats carefully consumed while driving. I had a few minutes between appointments and am chillin at the Bux with my hot coffee of choice (grande non-fat misto or cafe au lait as they call it everywhere else). I’ll be headed back to Austin by lunch for an afternoon of meetings followed again by what’s sure to be a necessary hot yoga session. My days seem to either be cram packed with activity or really slow. Lately cram-packed is the trend. What gives?! Happy medium? I like to be busy, but I’m ready for the weekend.
