Good morning all! Hope your weekend is going well. Mine has been great so far with one more wonderful non-work day to go. Yesterday afternoon Jensen and I picked up our new microwave at Best Buy and then ran out to the outlets for some shopping fun. I still have to call the guy to come install the microwave (and do some minor cabinet renovation), but I am mere DAYS away from getting my nuke on! Cooking ease please!
We followed up the errands with dinner at a cute cafe on the square of Georgetown (a small suburb of Austin just to the north). Monument Cafe has great breakfasts and lunches, but neither of us had ever been there at night. Since we were not dressed for anywhere fancy and needed grub sans wardrobe change we headed there to try dinner. Yum! I had a grilled snapper with a basil pecan butter (they have their own herb garden right out front), sweet potato fries, fruit salad, and steamed broccoli. Seems they can do it all, dinner included.
This morning we woke up at our ridiculous normal sleeping-in time of 7am (better than the weekday 6, I guess) and I immediately got the coffee pot going. I am between shipments of Cafe Britt (yes, I order coffee. It’s the best!), so the understudy Archer Farms Buttery Caramel from Target stepped in. I hadn’t tried this flavor and its pretty good.
For breakfast I was craving something a little different. I bought some San Gennaro sundried tomato and garlic prepared polenta at the grocery store yesterday and decided to work it into my morning meal. I love polenta! I don’t make it often because the hubby doesn’t like it, but the prepared versions are great and easy. I cut a couple of 1/2 inch slices and threw them in a pan sprayed with cooking spray until the outsides were brown and crispy.
After they were situated on the plate, I sautéed some onion in the pan and then added a couple of egg whites. After cooking and scrambling, I added a wedge of light swiss Laughing Cow cheese and mixed it all up until the cheese was completely melted.
I topped the grilled polenta with the egg mixture and tada! It was a great combo of flavors and definitely hit the spot. I will be having this again soon for sure.
I have some cleaning and yoga to do today along with a few last errands. Tonight we are having a friend over to watch the Lost finale and are planning to grill up some steaks and asparagus as the last Lost meal. Ever! Not gonna lie, kinda sad about it actually. Oh well, I have a few other favorite shows that will help me get through it 🙂
