Should I be embarrassed that we spent four and a half hours straight in front of the tv lastnight? I’m not, but I wonder if I should be. We did pause it to take potty breaks and make dinner, but we actually ate in front of the tv. *Gasp!* We don’t usually do that. Dinnertime is usually at the table, tv off, tell-me-about-your-day time. Luckily Sunday is the one day we both have off of work, so I knew what he’d been doing all day opening the door for veg time dinner upstairs. What sucked us in?
We really don’t watch much tv other than sports and I record a few choice gems like Brothers and Sisters, Parenthood, and Vampire Diaries (now I’m embarrassed) to watch sans hubby. He really might die if forced to watch these. Lost, though, was one show we both loved and were really into. Lastnight was the finale and it started with a 2 hour recap and cast interviews followed by the 2 and a half hour finale. We watched every single minute. I was happy with the ending, though I’m still a bit confused. That’s par for the course, though, since I pretty much stayed in a state of confusion during all 6 seasons. I guess it was fitting that it ended that way.
Our last Lost dinner was grilled steaks (bison for me) and a super yummy, perfect summer salad with berries and a goat cheese dressing that I found in and old Cooking Light (April 2009).
Berry Salad with Goat Cheese Dressing (serves 8 about 1 cup each)
2T champagne vinegar
2T fat-free buttermilk (I used nonfat plain greek yogurt)
2T dijon mustard
3oz soft goat cheese
6 cups torn romaine
2 cups arugula (I used all spring mixed greens)
3/4 cup blueberries
3/4 cup raspberries
1/2 cup cut up fresh strawberries
Combine the first 7 ingredients in a blender or food processor and process until smooth. Combine the lettuce and berries in a large bowl and drizzle with the goat cheese mixture. Toss gently to coat and serve immediately.
