Dinner lastnight was the Latin chicken recipe I referenced in my afternoon post yesterday. I promised the recipe if it was good. What’s verdict? Latin love! It was pretty spicy, so beware, but not fire-breathing-dragon hot. The sauce itself is very spicy on its own, but on the chicken it mellowed out.

Pretty close, huh? It was a simple 5 ingredient recipe from Cooking Light. I did sub in chicken breast for the chicken thighs it called for because 1) that’s what I had 2) we like white meat better 3) the husband has some aversion to bone-in anything and I agree the eating is much easier without.
Latin Baked Chicken – Serves 4 (1 breast or 2 thighs)
1/4c fresh lime juice
3T low-sodium soy
2T chopped chipotle peppers in adobo sauce
4 chicken breasts (or 8 4oz bone in chicken thighs, skin removed)
Preheat the oven to 400. Mix the lime juice, honey, soy, and chopped chipotles in a large bowl. Toss the chicken in the sauce, coating well and let sit in sauce at room temp for 10 minutes. Place the chicken on a broiler pan (reserving sauce) and spray tops with cooking spray. Bake for 15 minutes. Place the remaining sauce in a blender and blend until smooth. Place in a small sauce pan and bring to a boil, cooking for about 3 minutes. Remove the chicken from the oven and coat with half the sauce. return to the oven for another 10 minutes. Remove and coat with the rest of the sauce. Cook for 10 more minutes.
Jensen gave this one a thumbs up but we both decided another T of honey and maybe the same of lime would just kick it up another notch or two. It was like a souped up bbq. The multiple bastings and longer cook time made it super juicy and tender.
I didn’t have any Spanish rice to serve on the side as suggested and did have a plethora of veggies, so we had roasted white eggplant, squash, and onions instead. Those were just tossed with some EVOO, garlic, salt, and pepper and baked right along with the chicken plus about 10 or 15 minutes. Simple and quick not quick, really, but easy all the same. My eyes always perk up when I see any recipe with so few ingredients and all things I had on hand. Winner winner chicken dinner! 🙂
