Yesterday, during the veggie vs. fruit debate, another question came up. Is coconut a fruit or nut? It has nut in the name. Again google came to the rescue, though this time it was on my own at home later. We got too caught up in the original fruit conversation and never even began to chip away at coconut classification.
In 2006 the FDA did classify coconut as a tree nut, though it can technically be put into the fruit category as well and those with true tree nut allergies don’t typically have problems with coconut. I also uncovered the fascinating facts that the peaNUT is actually not a nut but a legume in the same family as peas and beans. I already knew that (patting myself on the back 🙂 ) but also found out that a water chesNUT and NUTmeg are also not really nuts. Ok, the English language needs some work.
All the nut-or-not info had coconut on the brain this morning and I decided to give my protein pancakes some island flair.
I added about a teaspoon of coconut oil to the chocolate batter and topped the cakes off with some sliced banana and shredded coconut.
Transported immediately from flash-flood ridden Austin to a sandy sunny beach. Pancake power!
