I am home today. Sitting around. Do I sound excited about it? My chillin skills need some serious work, but almost 30 years into my life I’m guessing patience is just never going to be one of my strong suits. Luckily I got in my AM hour o cardio early before the day indoors began.
I have hummed the tune from Final Jeopardy several times and there has been actual drumming of the fingers and twidling of the thumbs. Did I mention I’m not good at sitting around?
Anyway, in the spirit of being positive, lunch was a good one. First off I had a HUGE ruby red grapefruit. I like grapefruit. I like that its not too sweet. I like that its really juicy. See Jane Run. Not sure why I wrote that way, but moving on.
To join the mighty citrus, I used some leftover shrimp from the New Orleans-Style Shrimp I made on Monday night and threw it on top of shredded cabbage and shredded carrots topped with Newmans’ Own Low Fat Sesame Ginger dressing.
I had this same salad with teriyaki tofu the other night and its a nice change from the usual lettuce based salads. Since shrimp is often said to be pink though I think its orange and the ruby RED grapefruit seemed more pink to me than red (what is up with the color confusion!) I say it was a perfectly pink lunch!
