This weekend was full of family fun. My brother and sister-in-law were in town from Dallas. My brother recently accepted a job here in Austin (YAY!) that won’t start until next August first. Yes, like a year away (BOO!). Anyway, they were in town so my sister-in-law could interview for a job here and we planned some family fun time around her business trip.
They got in around 10pm on Friday night and we immediately uncorked the wine and sat around chatting. I was so happy they were here! I can’t tell you how excited I am that they will be moving here. My brother and I have always been very close and I ADORE my sister-in-law. We stayed up way past my bedtime just shooting the sh** (sorry, it’s a good saying and fit so well). Saturday morning my sister-in-law went in for her interview (more like a meet and greet) and my brother and husband headed off to do some boy errands (kayak store, REI, etc). I took the opportunity to get in my run and was back and showered in time for everyone to arrive home.
Saturday night the hubby and I took everyone to Parkside. We LOVE this restaurant, as mentioned before, and wanted to share it. My sister-in-law’s little sister and her husband live here too (how perfect is all of this!) so they joined us for dinner and drinks after at a fun dive bar called Deep Eddy. Again, I was up way past my bedtime, but we had a blast!
Today brought on the lazies. Brother and Wife headed out once they woke up and Jensen and I rolled down the driveway right behind them to grab lunch at the Spicy Pickle. Half a Yard Bird sandwich (chicken, bleu cheese crumbles, a little bacon, and apple. Holy wow!) and a small greek salad later, the tummy was satisfied and we headed to the pool. Today was our first over-hundred-degree day, which is actually pretty impressive in Texas where we reached 100 by the end of May last year (and most years, it seems). Pool time was cut a bit short due to the intense 104 that was literally searing the skin, and we headed home to veg. I did get a grocery run in, but other than that its been a day for chillaxin.
Kelly’s turkey enchilada casserole (made with lean ground beef instead of the turkey) was on the menu for dinner and after a bit of just sitting I headed in the kitchen to put the chef hat on. I have made her chicken enchilada casserole before (also FAB!), but she made this variation for Jensen one night when I was out of town (thanks, Kel, for feeding my man! 🙂 ) and he loved it. What can I say, he’s a beef guy, so I decided to give it a try.
As I was stirring the pot of the meaty filling, Jensen came down to the kitchen and said “this could feed an army!” That’s a big ole pot, y’all!
It actually only feeds six, so you know what that means? HUGE portions with stellar nutritional stats. And leftovers. For days 🙂 Lovin it! Mine was a little soupier than I expected it to be and Jensen confirmed her’s set more, but the flavor was the same. GOOD! I blame the oven 🙂

Day1: Guilty Pleasure
I already revealed this one, but in case you missed it, General Hospital is my guilty pleasure. I record it everyday and watch it at night or catch up on the weekends. I have watched it since I was a little girl with my mom. I can’t believe I have now admitted that twice on this blog. Oh well, how can anything that has been on the air that long be bad. No? Not buying it? Me neither, but it was worth a try 🙂
Since I don’t think we should limit ourselves to just one guilty pleasure, I will also add that red wine and dark chocolate would make the list, though I don’t feel as guilty about that one. Antioxidants and all 🙂
